A chilly fall night calls for a home cooked meal. This recipe is easy, balanced and satisfying - perfect for a dinner party, kids, or a date night in!
Ingredients----
2 Tbs Olive Oil
Half an onion
1 Tbs Minced garlic
2 Chicken Breasts
Italien spice
Olives, Feta cheese
Salt
Lemon
Spagetti
Zucchini spiraled
Grated or Parmesan cheese to taste
1 | Saute chopped onions, with olive oil, and garlic paste until golden brown. Then cut the chicken in filets (cut length wise so you get two thin steaks), then tenderize a bit. Add sliced olives, italian spice, salt and feta to the chicken (as shown in picture).
2 | Now roll the chicken - maybe secure with a bit of thread or a meat needle or carefully fry the chicken as is in pan. Now cook the chicken with the onions etc until fully cooked for ca. 15 min. If the onion get too brown slowly add a bit of water (all together about 300ml, but slowly) to create a gravy.
The Side
Cook the Spaghetti as instructed on the package. I love using buckweet noodles but was out, so plain ones had to do. There are some great lentil noodles out which are amazing and healthy. To add some veggies to this dish I spiralized 1 small zucchini and added it to the fully cocked spaghetti. Just add some olive out and let stand in a covered pot with the hot spaghetti for 5-7 min.
The more gravy you have at the end, the better. This is your flavour maker and takes amazing drizzled over the Spaghetti! Now plate and add some cheese to taste. Voila!
